 1 ¼ cups fiber one cereal crushed
 1 ⅓ cups unsweetened almond milk
 1 tsp vanilla extract
 ¼ cup nf greek yogurt
 1 egg whisked
 1 ¼ cups flour
 ½ cup brown sugar substitute
 3 tsp baking powder
 ¼ tsp salt
 ½ tsp cinnamon

Pre-heat oven 400 degrees .Combine all ingredients well and place in 12 muffins tins lined with liners or sprayed with non stick spray .
Bake for 20-25 min until a toothpick come out clean . Raisins or chopped dates optional

  1. I have a question. When it calls for 1 1/4 cup Fiber One Cereal do I use 1 1/4 cup as it comes out of the cereal box or do I measure once I have crushed them. I put them in my Vitamix to crush them but when I measure them crushed I no longer get 1 1/4 cup. Which is the right way. Thanks. I have made them and they are very good but I think I used more cereal to make up the 1 1/4 cups when crushed.

    1. I would say measure the cereal as is and not after it’s crushed . I did not crush mine fully and they were fine . The recipe was from the back of the box of cereal and I just made some adjustments
