Cake
 ¼ cup pumpkin puree
 1 egg whisked
 ½ tsp vanilla extract
 ½ tsp baking powder
 1 dash salt
 3 tbsp brown sugar replacement
 ¼ cup flour
 ¼ tsp cinnamon
 ¼ cup shredded carrots ( I microwaved for a min or toe)
 1 tbsp chopped walnuts
Frosting
  cup 1% cottage cheese
 1 tsp sf instant cheese cake jello pudding mix
 1 packet of sweetener
 nuts for garnish

Combine all ingredients well and place in a mini loaf pan and bake 375 degrees for 25 mins . All ovens are different and cooking times may vary
Remove from pan and let cool completely and frost

Combine the frosting ingredients well and top your cake 

the cake come to 5-6 ww points

  2. This cake is moist and delicious! I actually put it into a muffin pan, it made three nice size muffins for one point each! Then I made a frosting with 1 tablespoon of low-fat cottage cheese, A splash of vanilla, and half a tablespoon of sweetener and divided this up between the 3 Muffins for another point each. The total is two points per muffin and it was just amazing thank you so much for the recipe!
