Red Velvet Whoopie Pie / Norah Whoopie Pie

Yields1 Serving

2 tbsp flour

½ tsp baking powder

1 pinch salt

1 tbsp cocoa powder

2 tbsp Lakanto Monk Fruit granular sugar replacement

2 tbsp milk of choice I used almond

2 tbsp nf greek yogurt

1 egg whisked

red food coloring

Combine all ingredients in a bowl add 10-12 drops of red food coloring or as much as you like . Place in a large mug and cook in microwave for 21/2 minutes or bake in an oven 350 degrees for 15-18 mins.
Cool and fill with the filling of your choice the whoopee pie is 2 points with out the filling and 4-5 with filling
You can fill with 1 tbsp of whipped cream cheese and light whipped topping
