Pumpkin French Toast Bake for 1

Yields1 Serving

 6 eggs
 6 tbsp pure pumpkin
 1 ½ tsp pumpkin pie spice
 1 ½ tsp baking powder
 ¾ tsp salt
 3 tsp extract or skinny syrup
 6 tbsp brown sugar substitute of choice
 6 slices of 647 bread or any light bread cubed

Combine first 7 ingredient well in a small bowl. Preheat oven to 350 degrees and spray a mini loaf pan with non stick spray .
Add your cubed bread and combine well . Top with some pumpkin seeds and lily chips .
Bake for 20-25 mins until done
Let cool for a few mins in the pan and then remove by running a knife around the sides and flip out . I did warm my sf pancake syrup and poured over top.
It was 2 pp for me as I only had to count the bread.
