Pickled Onions

 1 large red onion thinly sliced
 ¾ cup cider or white vinegar
 ¼ cup water
 1 tsp salt
 2 tbsp monk fruit sugar substitute

Combine all ingredients except onions in a pan and bring to a boil . Pour over onions in a mason jar and let marinate for at least 30 mins. Serve or keep in fridge for up to 10 days .
