Hummingbird cake for one

cake

1 banana slightly mashed leave a few chunks

2 tbsp egg whites or 1 egg

1 tbsp SF Coffee mate Coconut Creamer or a slight dash of coconut extract or skinny syrup

1 tbsp diced pineapple use a bit more

½ tsp baking powder

¼ tsp cinnamon

1 dash salt

¼ cup flour

1 tbsp chopped walnuts

1 tbsp sugar replacement

½ tsp vanilla extract

filling/topping

⅓ cup cottage cheese I used 1% (whip it )

1 tsp sugar replacement

1 dash vanilla extract

pre-heat oven to 375 . Combine all ingredients well and place in a mini loaf pan 3 1/2 X 5 1/2 with pam spray . Bake for 25 mins and check with a toothpick . Combine topping ingredients and you can just top it or use it in the middle as well . the whole loaf if 6 ww points ( if you use the KingArthur 00 pizza flour it will be 5 ww points and 1/2 tbsp of walnuts it will be 4 ww points
